Gluten free graham crackers.

I had the ing.'s measured for these since Mon. I mixed them up 1st since the dough has to be refrigerated for 30 mins before rolling out.GF girl spent alot of time perfecting the right balance of the flours on these. I can't find Amaranth graham crackers out here. I thought I would give a try to this.
I didn't have parchment paper in the house. I dug out my old Tupperware plastic sheet to roll them out on. She was kind of vague on the directions on what size of cookie sheet & how to roll it out on them. She was only using 1/2 ball of dough@ a time. The dough ball isn't that big. I got out my biggest cookie sheet to use on it.
I actually kept the dough in the frig for the next day since I got too tired.then U have to refrig the dough on UR c/sheet in the frig for 15 min's while the oven is preheating. If U want cinnamon sugar on them, U put it on now. I followed the baking directions, 15 min's in the oven,let it cool 30 min'ss on the sheet. Also U scored the crackers before bakeing them. I ended up putting them back in the oven 3 times w/the crackers separated. The middles were still raw but edges were done .GC''s are suppose to have crunch. I don't know if I make these again or not. It hard on my hands & shoulders to roll out the dough. The dough has to be cold in order to roll it out. That means stiff dough for me to try to roll out =pain in my hands!! GC's are okay but not like brownies or chocolate chip cookies for me.
The taste is good,they have butter & honey in it so they are rich tasting. C/sugar on top is nice addtion.I prefer her granola bars better which I can't resist

Gluten Free Girl recipes

Wed. was the day I finally got to bake the recipes I had found on the Gluten free girl site. I had measured out all the flours Mon. I got to wiped Tue. from Monday,it got delayed
I decided to try 2 of her recipes I found on her site.She is very precise on her measurements. she saids the flours have different weights. She actually used a scale. I won't be getting into it like she is. My major baking days are over. It's also to hot to bake 4 mo's of the year here.
I tried the sandwich bread.It has alot of different flours in it. These flours aren't cheap. I decided I want to try the taste of GF baked foods vs a mix. Some of the mixes are nasty in taste.I saw her pic.on the blog & comments. I followed the recipe to the "t" on directions. I didn't want to waste these expensive ing.'s.
I let the bread raise for over an hour. I had preheated the oven for it to be a little warm for it to raise quicker in it. GF breads are cake like batter in texture. U will not get the stretchy pull of the dough like w/wheat dough. That is what gluten does it becomes stretchy. DO NOT use cider vinegar in UR recipe even it calls for it. GF Girl said it kill the yeast.
We ground up our own white rice four since Allen didn't find it @ Sun Harvest. I remembered I had millet in our c/board. Allen cleaned up our old grinder we used to grind whole wheat into flour.
I put an egg wash on the top of the bread. I put in the ice cubes in the pan @ the bottom rack.I let it set up 10 min's in the pan after it came out of the oven. I put it on my towel to cool off,upside down. My curiosity got to me,got a knife out to try a piece hot out of the oven. I grabbed the butter & took a bite. WOW WAS I SURPRISED! I didn't expect the crunch & texture I got from it. It's been the closest thing to real bread I have had in over an year. I forgot to say she uses stiff egg whites in the recipe plus 2 whole eggs.I couldn't believe this wasn't real bread. It even has air holes in it likewheat bread. The taste was great.The bread does take alot a time to make it but it sure is worth it for it's taste & texture. I have to make 1 more loaf to put in the freezer before it get's too hot.

Gluten free mixes test

Judy gave me some Bob's Red Mill mixes last Aug. for my b/day. I looked @ the sell by date on the pkg. It get's too hot to turn the oven on after May here.I have been baking GF this week.I had a bread mix up in my Tupperware box. I can't eat it because of the fava bean in it. For some reason dried beans in mixes make me sick.Maybe of the starches my body can't break down.
I decided to make it for him to eat for lunch. For a diabetic the bean actually slow down his blood sugar vs white flour which raise UR blood sugar.
I no longer have my bread mixer or bread machine which the twins have. I haven't eat bread substitutes since I went GF over a year ago.
I did what GF girl suggested 1.no vinegar added in the bread as in the recipe. I got a higher volume loaf w/ this mix than the 1st mix I did 2.put a pan of ice cubes in the bottom of the oven to make a steam in the oven for the bread to bake in. It seemed to work. I also covered the top of the bread w/ al./foil after 20 min's. It takes minimum of 60-65 min.'s to bake GF bread or it will be raw in the middle. GF bread will not have the texture than wheat base bread have.The batter is more like a cake batter. It does not have the stretchy pull yeast dough w/ wheat have.If making GF bread from a recipe be exact in UR measurements of the various flours.Follow the recipe to the "t" It doesn't have the give of working w/ the recipe like bread recipes do. Making wheat bread in Utah was different in feel then in Texas. When I moved to Texas since it was more humid in DFW I had to use more flour than in Utah.
Anyway this will be good for Allen's diet. Until we get more precise allergy testingfor him,I can sneak more GF food in his diet. I can't eat the mixes so I let him be the guinea oig & he's no wiser. It means he's going to be eating more of my GF food .
I made pizza for him for supper as a treat Fri. His job is up in he air right now. so we're watching our money. I made him a GF pizza from the fava bean mix from Bob's Red Mill. He liked it before. I's better for a diabetic than white flour crust ,it has more protein & fiber in it. I used so some Polis sausage on it,last of the cheddar cheese & black olives in the frig. I put a whole onion fried on it since he likes onion.
So he had fresh pizza for supper & we watched a funny DVD for a date nite @ home.

FRENCH TOAST for breakfast!!

To be Gluten Free U lose alot of UR fav. b/fast foods.Wheat allergies take alot of foods out.My favo. b/fast was toast w/ nut butter. It was quick & nutrious to get me a start for the day
I made Gluten Free s/wich bread Thur. I had to have some French toast. It actually holds up better in the egg wash. I probably soak it longe next time. I cooked it on slow heat,that's how Mark,s/law makes his yummy toast
I even indulged on more Rasberry jam than usual on it. I found l/over frozen Turkey bacon to go w/i warmed in the m/wave/This was pure heaven for me.

15 pages done!!!

I finally got started on the twins scrapbook project. I had taken all the photo's & p/card from the 1st magnetic photo book. E/thing is falling out of the book. That's how I got the idea to scrap it , I figured if the kids starting pulling the books out,stuff would fall out & get lost.I was supposed to do this for C-mas for them. Dec. was so cold,we had snow,my FM kicked in & my hands hurt so bad this winter so e/thing got delayed.
In filing my paper away I ran across paper I had forgotten about in my stash. I have been collecting items for 2 yrs to do this project Jan had gotten some collages for her b-day last year. I used some really cool travel paper that went well w/ some of my pic's. An Ephderma book I had bought for 1 project,I found some wooden looking paper to go w/ Plymouth Platation pic's. I had filed away a paper w/water on it. I was doing a pic/ that had water in a Lock. I remembered that paper, I pulled it out,it really set off the pic. well.
It really speed things up having the box of mat size colored c/stock on the table. All I had to do was flip thru the colors & pull out the mat size I needed.this is why I have 15 pgs of pic's matted on my patterned paper. I have ran out of Yes glue right now so I'm waiting on an order to come in.
I also used my Distress inks to ink some of the edges of my cards stock mats to age them a little to go w/the pic's I was mounting. Also I was glad I had a spare of Herma tabs in my drawer to use on my photos,
i have pulled the 2nd book of vacation photo's to sort thru & start mounting the pic'swhen the Yes glue comes in.

It took 3 days off & on to sort thru my new box of patterned paper. I sort it by size & color.I have them sorted by floral,geometric etc in color families. While I was @ it,I mended my 12x12 box w/glue & duct tape. I reorganized the paper in there before I added the new paper. Now I have Vellum paper up front, my Easter & spring next so I won't forget to use it,floral,geometric ,western,patriotic paper @ the back of the box. I found some paper I used on my new project that had gotten buried in my stash.
I dumped out my box of colored card stock on the table. It had been in a box laying flat. I had it organized but I hate rummaging thru it looking for a size I wanted.I have 2 JoAnn C-mas card boxes that now have mat sized pieces in it. I have it in color order, white .red,orange ,yellow pink,green,blue,brown grey & black, This paid off Fri. while s/booking. All I had to do was just flip to the color I wanted for a mat. My L/O's worked up so quick this way.
The problem is w/the bigger pieces.I used a tall priority mail box for these. the tall skinny pieces are in color bundles w/a rubber band around it. I was afraid if I just put the bigger pieces in loose even in color families I still have a mess finding them I 1st started using the big black clamps w/ 1 color family. I ran out of them. I tried using smaller paper clips since I out of the bigger paper clips. I noticed later when I was thru the box,the paper clips were coming off.
I have ATC size pieces sorted out & put in my drawers w/rubber bands. Some of them are going to a Swap-bot buddy
I have a flat box on the floor w/odd sizes of patterned paper sort by sizes.

15 # of paper!!!

I got a Priority box full of paerr scraps & 12x12 paper in the bottom. In Oct. I posted a request if anybody have any paper scraps.6 people on 2 Peas in a Bucket,replied only 2 people sent. A women sent a PM saying she had her mother in the hospital etc. I told her not to worry about the paper ,take care of her mother was the most important thing.I checked in w/her on T-giving time to see how her mother was doing. She is in the final stages of Parkinson's & not expected to live much longer.A fewwks ago I got a PM from her requsting my address,she had a box on the floor.She went thru her stash some more & pulled out some 12x12 paper. An unopened SEI pak was in there. It will match the geomotric theme I'm using for my mission s/bk. I have enough 12x12 paper, it filled up the rest of my box.
What amazed me it was a total stranger on a s/bk site who shared w/me.It made up for the money I spent in sending a pkg to Denmark for a Swap-bot buddy.

Signo white gel pen

I have been looking for months for these. I have seen them talked about on s/bk threads I finally did a search for them online since I can't turned them up in El Paso. I needed a white pen to finish up Forest pages. I didn't like the Souffle white pen,it takes too long for the ink to come out. Plus the refills are hard to find w/o buying the set. The white Glaze pen is too transparent to write with on tags.
I'm pleased they write real well, don't skip,leave blops of ink behind,doesn't take forever to write with.They write like a regular pen,the flow is good,leaves a thin line since it's fine point.
I also ordered the gold pen to try it out. I have had a hard time finding a true gold ink in a pen,not a felt marker that leaves a wide line. Again it flows smoothly,writes a thin line.
I used it also to outline some die cuts to make it stand out. I like the way the white ink set up when dried

FINALLY I finished s/bk Forest's of all the 15 b-days. I didn't get the last 4 b-days done to give to him when he came @ T-giving time. After 5 mo's of having Forest's birthday pic's in a red envelope sitting on my table & a stash of paper etc sitting on the dehumidifer,the stash is gone!!!
Scrapbooking is like a puzzle to me. It seems like I have to get all the pieces together 1st. It seems like it all has to gel together before I can plunge into the project. If I'm stressed out or have other deadlines to meet I can't scrap book. I can come up w/ideas easily enough for my cards. It's been 2 mo's sinceI last s/bk this project. I even had the paper picked out to make mats w/it to go w/ the photo's etc. I had the color theme picked out for each year w/paper clips & notes for what year etc.
I finally made myself sit down w/my lightbox on,start making mats for the photo's. This winter has really made my hands hurt. Somedays I can't do things that take coordination etc. It rained all day Wed.,it was gray,cloudy etc.I lose those days w/pain & fatigue.I put in 2 big sessions this week so I could put the pieces under the book press after using Yes Glue to dry overnite.
Last nite after sleeping for awhile in my recliner, I went into my room. I wanted to make sure pages weren't stuck together. after looking @ them I decides I wanted to put Stickles on some of the places. The pages have to dry s/where so the Stickles doesn't get smeared before it dries. I usually do this so it can dry overnite w/o smearing the wet Stickles.I then wanted to take pic's of them to upload on Flickr. 1 page still have some needed embellishments to balance out the page.
I have any l/over stickers back in my sticker n/book. Scraps are in my file folder. Whole sheets of paper are back in their spot.
My effort on cleaning up my room & swapping items in my stash has paid off. I forgot about the b/ful colorful fibers I got last fall in 2 swaps.I can find things now when I get in the creative mode wherre e/thing starts flying.Now I don't have to go digging thru items thinking I kanow I have this s/where. that really stresses me & I lose my creative edge when I can't locate the needed item.

Finally room is getting clean

Got some books out of closet,Laura has them. Katya birthday presents are in the mail. Finishing up Forest's b-day s/book pages on my table. I have had a pile of stuff sitting on the dehumidifer for over 2 mo's. I started sorting thru the pic' 5 mo's ago. when I finish it,I can file away the items I was using. I've cleaned up the stuff pushed back on my table. All of my V-tine cards are done. I made 35 for Iraq,5 for my women on my churches mail route. I tucked the leftover supplies into an envelope to give away to a Swap Bot buddy for her to use.
My stash of stuff I have been trading with is about gone. I sent all my sticker stash out of my notebook to a Swap Bot buddy in Denmark. I had given some to my grandkids a while back. Very little is left in there now. I also sent her some patterned paper left from a card making kit. That ended up[ costing big bucks to go to Denmark. Won't do that again. @ least she have plenty of supplies to make ATC's. I have traded alot of stamps,wooden ones I wasn't using or didn't want out of my stash. I have gotten some new ones. I like the new ones,clear to use for Easter & spring cards.
I have been on the computor,uploaded my new cards onto Flickr. I worked x2 days on Swap-Bot. I have all my swaps done I signed up for. I cleaned up my profile this a.m.,rated my partners on my swaps,sent out Pm 's for tags & swaps I got last week. I deleted alot of favorites off my file I didn't want anymore.I also have an updated look for my blog so I should be set for the computor for clean up also
Next is to get outthe twins vacation pic'sas kids to sort thru them to start s/booking them for a late C-mas present.Jan sent me a big photo book. I got the 1st photo album down from thefile cabinet. Allen has to scan in 100 baby pic's of them. I plan to put them in the album for Jan.I will make journaling strips to go w/ them of dates,places we lived,their ages. This will be their b-day present for them in July. Heidi wants a digital copy,Allen will have to burn a CD for them. This will be a presentthat won't cost any money just our time
Now I can spend sometime working in my room w/o any deadlines over my head.I don't have stuff in my face that I can no longer do or not being used sinceI've cleaned it out.I want to do some projects just for me I haven't had time for.I 'm tired of making cards,I've been making them since Oct, I have sented @ least 4-5 s/ments of cards to Iraq. I made 95 C-mas cards last year. I have made winter & Valentine cards. I made 35 V-tine cards to go to Iraq,5 for my VT route, 1 for Allen
